Serves: 4

Ingredients:
• 2 zucchini
• 1⁄2 cup purple onion, large, thinly sliced • 4 cloves garlic, minced
• 1 cup cherry tomatoes, quartered
• 1 handful fresh basil leaves, finely sliced • 2 tsp olive oil
• 2 tbsp olive oil
• 1 tbsp apple cider vinegar

Instructions:
• Spiralize zucchini into noodles.
• Heat 2 tsp olive oil in large skillet over medium heat.
• Add onions and sauté until translucent, 6 minutes.
• Add garlic and cherry tomatoes, sautéing briefly.
• Add zucchini and basil and sauté another 3–4 minutes, until tomatoes are soft and zucchini slightly tender.
• Add olive oil and vinegar.
• Toss to combine and serve.
