Chickpeas are a great staple to have around as they are high in good carbohydrates, fiber, protein, and iron.  Here they are combined with tart cherries, sweet mandarin oranges, and cruncy pecans for a nutrient packed meal with loads of flavor and texture.  Tart cherries are teeming with nutrients that can aid in fitness recovery, while compounds in ginger may lessen muscle pain postexercise by decreasing inflammation.

Makes 4 Servings

Ingredients:

2 cans (15.5 ounces each) chickpeas, drained and rinsed

1 can (11 ounces) mandarin oranges

1/2 red onion, diced

1 clove garlic, minced

1 Tbsp peeled and minced ginger

2/3 cup chopped pecans

2/3 cup dried tart cherries

1 jalapeno chili pepper, minced

1 cup chopped parsley

2 Tbsp apple cider vinegar

2 Tbsp extra-virgin olive oil

1/8 tsp salt

1/8 tsp ground black pepper

Directions:

In a large bowl, comine the chickpeas, oranges, onion, garlic, ginger, pecans, cherries, chili pepper, and parsley.  Stir to combine.

In a small bowl, whisk together the vinegar and oil.  Season with the salt and pepper. Pour over the chickpea salad and mix well.

*The original recipe contains 4 ounces of feta cheese, crumbled, which I removed but you can add in if desired
