Mexican Black Bean Salad with Tofu

1 serving 15 minutes

1/5 cup black beans (cooked)
1/4 red bell pepper (chopped)
1 tbsp red onion (chopped)
1/4 avocado (38 grams, diced)
1 1/2 tbsps lime juice
1/16 tsp chili powder
1/16 tsp cumin
1/16 tsp sea salt
3 1/2 ozs firm tofu (cubed)
1 1/2 tsps extra virgin olive oil


  1. Cube tofu and add to non-stick pan with olive oil and lime juice. Sauté until browned.

  2. In a large mixing bowl combine the black beans, pepper, onion, cubed tofu and avocado.

  3. Add the lime juice, chili powder, cumin, and salt to a mason jar. Seal with a lid and shake until combined. Pour dressing over the black bean mixture and stir until evenly coated.

  4. Serve chilled and enjoy.
