Are you looking for a breakfast recipe that not only tastes divine but also helps you kickstart your day with a burst of energy? You've come to the right place! Today, I've got a fantastic recipe for vegan protein pancakes that are a delicious and nutritious alternative to traditional pancakes. Let's get cooking!
1 cup (120 g) all-purpose flour
1/4 cup (28 g) vegan protein powder of your choice
1 tbsp baking powder (remember, not baking soda!)
1/2 tsp sea salt or kosher salt
2 tbsp maple syrup (or sweetener of your choice)
1 cup water (plus more as needed)
1 cup blueberries
Combine the Dry Ingredients: In a mixing bowl, whisk together the flour, protein powder, baking powder, and salt. Make sure you eliminate any lumps and that everything is well incorporated.
Add the Wet Ingredients: Stir in the maple syrup. Next, slowly add the water to the mixture. Mix it until it’s “just mixed”—it should be slightly lumpy but still pourable. If it looks too thick, feel free to add a bit more water.
Add Blueberries: Mix in last.
Let it Rest: Give your batter a breather! Allow it to rest for about 5-10 minutes while you heat up a pan over medium-low heat.
Cook the Pancakes: Lightly spray your pan with cooking spray or use a good non-stick pan. Scoop around 1/4 cup of the batter onto the pan for each pancake.
Flip and Finish: Cook the pancakes until bubbles start appearing on the surface and the edges look dry and firm. Time for the flip! Cook for another 1-2 minutes, and voila! Your pancakes are ready to be devoured.
Enjoy: Top with your favorite healthy toppings and enjoy!
Blueberries are like little gems packed with antioxidants, particularly flavonoids, which have been shown to improve memory and general cognitive function. As we age, maintaining cognitive health becomes increasingly important. Additionally, blueberries are rich in vitamins C and K and provide a good amount of fiber. They are also known to reduce the risk of heart disease, which is especially beneficial for women over 50 who may be more susceptible to cardiovascular issues.
Protein needs tend to increase as women age, especially if you're aiming for muscle retention and overall strength. Protein powder can be an excellent supplemental source to help you meet your protein goals.
Now you have not just a scrumptious recipe but also the peace of mind that comes from knowing you're doing something great for your body. Here's to living our best lives, one delicious and nutritious meal at a time! Cheers!
